I have been fortunate to be surrounded by a group of diverse and honest
friends and acquaintances. It seems we always ended up in the kitchen
or around the grill. My passion for sharing and entertaining has progressed
to something a bit more structured. I love to travel and experience various
atmospheres, cultures, and life experiences around the globe. Creole,
Cajun, Southwestern, and Southern influences are evident in my dishes.
I acknowledge that I cater to a select crowd; forget the 80%,
my focus is to the discriminating few, but then again, I have never really
conformed to conventional wisdom.
I received management training in food services while in the Army. I compete
in various bbq competitions, volunteer at non profit events, and attend
seminars and cooking classes when possible. Most importantly, I surround
myself with great cooks and friends - constantly honing and expanding
the culinary innovations which I offer to you.
