So Good It's Criminal
OK - I never knew I had so many friends that are felons. I have had numerous
friends sheepishly admit that they carried off Craig's BBQ from my party
in their purses, pockets, and plates. One guy found the leftovers in my
house the next day and took a large bag of the brisket. These were law abiding
citizens until they tasted the incredible BBQ from Belly Up. It's so good,
it's criminal. - "Junebug" John Stuerke |
Smokin'
"Thanks to the "Brisket Man" for your donation of Brisket and the
fresh baked Oatmeal Choc Chip Pecan cookies. Shared samples of the
Rum cake brought about comments like - "It was so sensuous that I felt like
I needed to smoke a cigarette afterwards." The meat had our volunteers
ooo-ing and awing. Thanks again for your support of KKFI 90.1 FM -

The BBQ was fabulous and it very much reminded me of rich and
tasty BBQ culture of Kansas. Convey my thanks to your friend for
an unbelievably good BBQ feast. BELLY-UP-BBQ ROCKS (or "JAZZES,"

The Secret is in the Wood
Way to go Craig! Your unique approach has resulted in some of the tastiest BBQ in Kansas City! The brisket is lean yet moist and oh so flavorful. The salmon has a great "smoky-fruity" taste, I suspect it's from the wood you use, what's your secret? Put me on your list, I'd like to place monthly orders! - Don Roberts |

Hold the Sauce
The pulled pork is my favorite...very lean, yet still juicy. And it DEFINITELY doesn't need sauce, that would just cover the flavor! - Danny "smoked bologna" Burns

Rum Yum
Craig… I haven't tasted BBQ this good in a very long time. I've had the salmon, ribs, and sausage, all incredible. Not to mention the rum cake, which didn't last thirty minutes once we opened it. The flavor was awesome… - Bill Lytton

Tasteful Poetry
Dear Craig - I have dined on salmon on a tiny fishing boat while slowly cruising the Suir River at Waterford, Ireland. I have dined on salmon in an unbelievable castle in Ireland…at a country estate in Scotland where we were piped into the dining room by a Scott in full dress…in Alaska, Vancouver, Seattle, and San Francisco…but never have I been so captivated by what I was eating as I was the salmon you sent me. First there was the aroma…delicate and inviting. Then there was the appearance…lovely color…the pale, pale apricot of an exquisite Oklahoma sunset. The feel of it in your mouth - almost silky. Then the taste…moist with a lively coating…no part of it overpowering but blended together so that you hate to swallow, hoping the flavour never ends. It probably took me longer to eat this meal than any I have had before as I truly savoured every bite. I plated it with a dollop of sour cream with tiny capers and a sprinkle of sweet relish; a mélange of veggies in an almost salmon who wanted veggies. I restrained myself and have enough salmon for two more delightful meals. Thank you, thank you for the most delightful salmon I have ever tasted. Best wishes - Marjorie Roberson

JP Wine Bar
On the night I went to dine in the big front room, the first Friday of August,
I was with my friends Bob and Carmen and Carmen's new boyfriend, Brandon…
Forty minutes later, there were 17 glasses of wine - empty and full….
We all liked the combination of sliced figs and pears splashed with honey as
well as an offbeat assemblage of spicy chorizo, a fat marinated artichoke
heart and a curl of frozen melon. Everything was lovely except for the
Panini du jour, a hunk of bread filled with smoked salmon and God knows
what else. "The Panini," Carmen said, setting down a glass of
Argentine Zamba Marca, "isn't sending me." The wine did however,
and we left J.P.
in exceptionally good spirits…Charles Ferruza - article published Aug 24, 2006. |
